Reading their poems with music would be easy to do as a podcast using Audacity but be sure you're using public domain music. They could also make videos by taking pictures of the words in their poems. <a href="http://animoto.com/">Animoto</a> is offering full access to educators <a href="http://biz.animoto.com/education/overview.html">HERE</a> Sounds like a project the kids would enjoy.

I am a high school music teacher. And in my electronic music class we have a project where the students find a nursery rhyme and put music to it. We do this using garage band. Nursery rhymes are easy because of the rhythmic feel to them. Then we move on to more lengthy compositions.
