Have you considering being a tutor? With larger class sizes next fall, students will get even less individual attention. Parents want their kids to succeed and will get an extra job or give up something to be able to afford tutors. I know people here in Miami making $25 to $75 an hour doing one-on-one tutoring in math (highest paid) and other areas. biggest challenge is getting started, finding the students to be tutored in areas you are comfortable in.
If you still have a job now, get the word out that you will be available to tutor starting in May (or sooner, after school). You shouldn't tutor anyone who is in your class, but they all have friends. Let the counselors at the schools nearby know that you are available too. Some afterschool and Saturday programs would love having a real teacher involved too. Depending on how much you can get to tutor, you might even make more than you did as a teacher.
Maybe you could work with high school students in preparing their portolios to apply to fine arts programs in college.
