I have used document cameras to demonstrate science experiments and biology dissections - it is great for students to see a dissection 'up close' before performing their own, so they have a better idea of where to cut. Much more useful than a line diagram in a text book. Also useful for students who are a bit sqeamish to do the actual dissection - sometimes they can experience the learning without having to touch the 'wobbly bits'!
