Is having Kindergarten students writing sentences a good form of discipline?

I don't believe it is a good form of discipline. It turns the act of writing and composing into a punitive exercise. Children often then look at writing as a negative thing and tend to stay away from doing more of it in the future. Children need to learn that writing/composing sentences and using their creativity is a positive thing. I understand that it is Kindergarten and there won't be an extensive amount of "composing" or writing long narratives, but teaching them early on that writing is a punishment or form of discipline tends to shape their view of not doing it for fun in the future.

Definitely not. Allowing to them to express creativity in their own way and at their own pace truly brings out the best in kids. We don't want little kids learning to hate writing, do we? Anything that they are made to do ahead of their age is not right. I feel very strongly about this.
