One of the keynote speakers talked about the 'National Curriculum' and he seemed very disappointed that Australia was going that way. Can someone tell me why he is thinking that way?

Well, you were there and I wasn't so I can give you the general reason why some people are against it but not necessarily him.

National standards crowd-out local standards and teacher-choice. What is important in one part of the country may not be in another part. Australia has some significant cultural differences among her people and national standards tend to ignore that instead of working with it. Bureaucrats working in capital city office buildings simply will never get what happens on the ground in the classroom. Local teachers deal with those things every day. They know what can, and should, be taught.
