I'm supposed to be teaching a course on desktop publishing starting in February. The Manitoba gov't curriculum for computer courses is a little bit sketchy. (Check their website if you don't believe me. Can anyone recommend a curriculum document that provides some detail for desktop publishing or other computer courses?

Hi James -- I did a general members search for you and there are 2 people who specifically mention desktop publishing:

If you click the members tab at the top and then enter your subject words in the Search Box you will get these 2 people and be able to contact them directly. That's how I found seven pages of Canadians. Alternatively, if you just want to poll our group, you may be able to send a message to everyone from the CanMash group page. There's a link under Admin Options that says "Send a message to the whole group" that may work for all members. I haven't tried it yet.

Here are a couple of links that could help as well:
http://lessonplans.btskinner.com/dtp.html
http://missouricareereducation.org/curr/cmd/businessedG/html/index....

and a Canadian Learning package from BC (only 1 module but you can buy it)
Open School Data Management 12

Good luck with your search.
Here's the Information Processing Curriculum from the Saskatchewan Evergreen Curriculum:
http://www.sasked.gov.sk.ca/docs/info_pro03/index.html
Take a look at Module 19:Desktop Publishing in the Core and Optional Modules Section.
This provides some detail but not a ton. Not really any info on specific resources/tools. Hope this can help you somewhat, let me know what you think of the module.
