Once the students reach 4th grade, I allow them to do one of the following:
1. Robotics – I use the Lego Mindstorms for my robotics course. They have several books that are great for the students to use. I recommend for starters (it is a little pricy, but well worth the money): http://www.legoeducation.us/store/detail.aspx?CategoryID=178&by=9&ID=1578&c=1&t=0&l=0

All of my students (2nd – 6th) work on Math and Reading skills. The books I use go from Kindergarten all the way to sixth grade. You can order a copy of the reproducible books here: http://productsearch.barnesandnoble.com/search/results.aspx?store=book&SID=535348
I also find these units of study of use: http://schools.nyc.gov/Academics/GiftedandTalented/EducatorResources/default.htm

2. Forensic Science – I use this kit (they have other subjects as well) http://www.commlearning.com/Forensic_science_CSI_for_kids_middle_school_after_school_lab_program_supplies_study_curriculum_lessson_plan_kit
3. Computer Game design – I use the Scratch program created by MIT. Go to this website: www.scratch.mit.edu as well as the teacher resource site: http://scratched.media.mit.edu/
I also find for history that this site has some great activities: http://www.learningthroughhistory.com/
Hope this stuff helps.
